Cider, a traditional natural drink made from pure apple juice, is now being seen in a new light.

L'Aunay is the name of a hamlet of granite barns, and houses situated in a open valley edged in hedgerows and dotted with small woodlands. The buildings are grouped at the end of a small road with fields behind rising to a thicket and descending towards a trout stream which runs the length of the farm. Poplars are planted along the edge of the stream and adjacent to these the cider apple orchard rises up the slopes of the fields

The 'terroir' of the site, its free-draining sandy soil, its mild climate and granite outcroppings are perfect for cider apple production. The ancient cider wheel attests to the long tradition of cider-making on this site.

glass of ciderGiven the beauty and the history of our farm, we could do no better than to extend the traditions of the past with the knowledge of the present.

At the end of a long summer's ripening, we harvest each of 10 different cider apple varieties separately.  The fruit is pressed to produce the juice, which slowly matures over the cool winter to create specific qualities of golden colour, effervescence, perfume, tartness or sweetness.

The selection and blending or 'assemblage' of the different juices is the secret to producing the very best cider.
